Bikini Recipe

Makes enough for 10 servings

For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Drink (yields 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Put every components inside a pot, bring to a simmer, mixing to dissolve. After that, take off the heat and leave to cool fully. Transfer to a clean bottle, close it keeping it in the refrigerator, where it will keep for about four weeks.

Preparing the Premix: Mix the specified spirits and syrup in a large bottle, allow it to infuse for one hour, then filter it best through cheesecloth, so it's completely strained.

For serving: Add 85ml of the premix to a stirring glass filled with ice, and stir gently for a minute to cool it down. Strain into a cold coupe glass or equivalent, top with a few cranberries and complete it by giving it a brief mist of mandarin oil over the drink.
